Ingredients:

  • Canned chickpeas 15 oz.
  • Frozen spinach 1 pound
  • Tomatoes 1 cup
  • Salt
  • Garlic 4 cloves
  • Yellow onion 1 medium
  • Olive oil 1 tbsp.
  • Lemon juice 2 tbsp.
  • Vermicelli noodles 1/2 cup
  • Black pepper
  • Red pepper flakes 1/2 cup
  • Paprika 1 tsp.
  • Coriander 1 tsp.
  • Allspice 1 tsp.
  • Chopped parsley 1 cup

Instructions:

  1. Take a large pot, add olive oil to it, and heat it over medium heat.
  2. Put the chopped onion and garlic and cook until it becomes soft.
  3. Add the spinach, tomatoes, Vegetable broth, and chickpeas, and then season with parsley and salt and then pepper.
  4. Mix in the spices to it.
  5. Boil it properly and then add the spinach to it and simmer for almost 20 minutes.
  6. Fry the noodles in a pan. Keep it light brown and do not burn.
  7. Mix the noodles and the mixture in each other and cook until the noodles become tender.
  8. Take out on a serving plate, sprinkle lemon juice, and enjoy.

  • It is your choice to choose either fresh spinach or the frozen one.
  • You can keep this recipe for further use in the fridge for almost 3 days.
