Full Recipe:

  • 1/2 cup seeds (e.g., pumpkin seeds, sunflower seeds)
  • 1/2 cup shredded coconut
  • 1/4 cup nut butter (e.g., almond butter, peanut butter)
  • 1/2 cup rolled oats (certified gluten-free if needed)
  • 1/4 cup dried fruit (e.g., raisins, cranberries, chopped dates)
  • 1/4 cup maple syrup or agave nectar
  • 1 cup nuts of your choice (e.g., almonds, cashews, walnuts)
  • 1/4 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt (optional, depending on whether the nuts are salted)

  1. Prepare Pan:
    • Put parchment paper in an 8 by 8 inch square baking dish, being sure to leave a little overhang for easy removal.
  2. Combine Dry Ingredients:
    • Put the dried fruit, almonds, seeds, shredded coconut, and rolled oats in a big bowl and mix well. Thoroughly blend.
  3. Prepare Wet Ingredients:
    • In a separate microwave-safe bowl, combine nut butter, maple syrup (or agave nectar), melted coconut oil, vanilla extract, and salt (if using). Microwave briefly, just until the mixture is easy to stir.
  4. Combine Mixtures:
    • Pour the wet ingredients over the dry ingredients. Stir until everything is well coated and evenly distributed.
  5. Press Into Pan:
    • Place the batter in the baking dish that has been preheated. Make sure the mixture is evenly distributed by pressing it down with a spatula or your hands.
  6. Chill:
    • To make sure the bars are firm and set, chill the dish in the refrigerator for at least 2 hours.
  7. Slice:
    • After the bars have cooled, use the overhanging parchment paper to remove them from the pan. Cut them into bars of any size you like by placing them on a cutting board.
  8. Store:
    • For optimal freshness, refrigerate the Plant-Based Snack Bars after storage. For convenience when you’re on the move, you can wrap each one separately.
