Vegan Cajun Pasta

Ingredients

  • Olive Oil 2tbsp
  • Diced Yellow Onion 1
  • Chopped Garlic Cloves 3
  • Canned Chickpeas 1
  • Sliced Red Bell Pepper 1
  • Green Bell Pepper 1
  • Cajun Seasoning 1 1/2tbsp

Pasta Sauce

  • Uncooked Penne Pasta
  • Nutritional Yeast 2tbsp
  • Roasted Diced Tomatoes 1can
  • Vegetable Broth 2 1/2 cups
  • Coconut Cream 1/2cup
  • Cornstarch 1tbsp

Garnish

  • Fresh Chopped Parsley 2tbsp

Ingredient Notes

Olive Oil: It is used to cook all ingredients. You can use vegan melted butter or vegan oil.
Canned Chickpeas: Use canned chickpeas to add a protein content.
Garlic cloves: It enhances the dish’s aroma.
Pasta: Choose any flavorful pasta to make this recipe.
Nutritional Yeast: It gives an umami and cheesy flavour.
Cornstarch: We used cornstarch to thicken the pasta sauce.

Instructions

  1. Take a pan, and place this pan on medium flame on the hob.
  2. Add olive oil to this pan and warm.
  3. Next, add onions and saute it for 2-3 minutes until softens.
  4. Add chopped garlic, one teaspoon of Cajun seasoning, sliced bell peppers, and canned chickpeas with onions.
  5. Cook all ingredients for 3-4 minutes until bell pepper’s color changes.
  6. Switch off the stove button and transfer the mixture to a plate.
  7. Add uncooked pasta, half a teaspoon of Cajun seasoning, vegetable broth, diced canned tomatoes, and nutritional yeast to the same pan.
  8. Boil all ingredients over a high heat.
  9. After that, low the flame. Simmer it for 10-15 minutes until the pasta is cooked.
  10. Meanwhile, we will ready the slurry.
  11. Add cornstarch and coconut cream to a mixing bowl.
  12. Combine all ingredients until mixed well.
  13.  Add this mixture with cooked bell peppers to the pan.
  14.  Mix all ingredients. Cook it for 1-2 minutes until sauce absorbs.
  15. The delicious Vegan Cajun Pasta is ready.
  16. Shift pasta into a serving dish.
  17. Garnish it with fresh chopped parsley.

Tips

You can add homemade or ready-made Cajun Seasoning. Preferable to use homemade seasoning.
Add red or green onion instead of yellow.
Try with vegetables like broccoli, zucchini, green beans, cauliflower, kale, spinach, or cauliflower.
Used chopped parsley and grated vegan parmesan cheese for garnishing.
Simmer vegetables separately in a pan for flavours.
You can squeeze the lime juice over the pasta to give it a citrus flavour.
Add Vegan Cream to make extra creamy pasta sauce.

Storage information

Refrigerator: Cover the Vegan Cajun Pasta in a sealed box. Refrigerate this box for 2-4 days.
Freezer: You can freeze this pasta and enjoy it later. Freeze it for 1 month.
Microwave Oven: To defrost the pasta, reheat it in a microwave oven for 1 -2 minutes.
