Ingredients
- Hearts of palm, 14 ounces
- Chickpeas 15ounces
- Medium-size tomatoes 2
- Persian Cucumbers 2
- Chopped cilantro, 1/2 cup
- Small red onion, 1/2
- Jalapeno 1, chopped
- Crushed garlic clove 1
- Fresh Lime juice, 1/4 cup
- Orange Juice 1/4 cup
- Lemon Juice 1/4 cup
- Avocado 1
- Vegan oil 1tbsp
- Agave Nectar 1tsp
- Salt 1/2 teaspoon, or add according to taste
- Freshly crushed black pepper, 1/2 teaspoon
Ingredients Notes
Hearts of Palm: It is used in place of fish, which is the primary ingredient of the traditional dish. You can add crushed nori or kelp granules for a seafood-like flavor, but its taste will be different than fish.
Chickpeas: They provide a main source of protein. You may add or skip depending on your choice.
Tomato: I used cherry tomatoes to make this dish. You can use vine-ripened or Roma tomatoes as an alternative.
Cucumbers: Add cucumbers without peeling off their skin. It gives a refreshing taste.
Cilantro: You can replace it with finely garnished parsley.
Red Onions: We cut onions into fine, thin slices or cubed sizes.
Garlic: I used a fresh garlic clove instead of a store-bought, ready-made jar.
Agave nectar: It is an optional item.
Instructions
- Take a pressure cooker. Add raw chickpeas and water to this cooker.
- Shift it on a burner and simmer it for 17/22 minutes at medium temperature.
- When chickpeas are soft, turn off the burner.
- Remove the cover, and release the pressure.
- After that, place the boiled chickpeas aside.
- Next, wash the hearts of the palm and cut half lengthwise, and half of them cut into a moon shape using a knife.
- Now, cut the tomatoes, Persian cucumbers, onion, and avocado into slices.
- Add into a bowl, and set aside this.
- After that, add hearts of palm, cooked chickpeas, cilantro, and jalapenos with sliced tomatoes, cucumbers, and onions.
- Combine all items by using a silicon spoon.
- Take another mixing bowl. Add orange juice, lime juice, chopped garlic, agave nectar, lemon juice, salt, and black pepper to this bowl.
- Combine all ingredients. Now, take a salad dish.
- Add the first layer of cooked chickpeas and hearts of palm mixture, the second layer of juice mixture, and the final layer of seasonings and avocado.
- Add the salt, black pepper, and juice quantity according to your flavor.
- The tasty and healthy vegan Ceviche is ready to serve.
