Vegan Chipotle Portobello Mushroom Tacos

Instructions:

  • 8 Toasted Tortillas
  • Refried black beans 28 oz.
  • Portobello Mushrooms 4 Extra large
  • Red bell pepper 2x.
  • Onion 1x.
Chipotle Marinade:
  • Cilantro 1 tsp.
  • Cumin 1 tsp.
  • Canned chipotle sauce 4 tbsp.
  • Cooking oil 2 tbsp.
  • Salt
  • Chopped garlic 1 tsp.
Garnishing:
  • Sliced avocado
  • Cilantro
  • Vegan Cilantro cream
  • Pickled onion

Instructions:

  1. Turn on the oven to 400 degrees.
  2. Slice the bell pepper, the onion into rings, and the mushrooms into small slices. (make sure to slice all these equally for a better look).
  3. Take a pan and put the equal-sized baking sheet in it.
  4. Make the sauce by combining all the sauce’s ingredients in a container.
  5. Coat the bell peppers, mushrooms, and the onion rings evenly in the marinade sauce.
  6. Dredge some salt over the mushrooms and leave it for almost 15 minutes.
  7. Roast them properly until become soft and tender.
  8. Heat the beans properly.
Assembling:
  1. Heat the tortillas using a stove or an oven.
  2. Spread the black beans over it.
  3. Now, place the onions, mushrooms, and bell pepper equally.
  4. Garnish it with chopped fresh cilantro, cilantro cream, or any of your favorite toppings.
