Vegan Orange Chipotle Tofu Skewers

The Vegan Orange Chipotle Tofu Skewers are a delicious recipe. Furthermore, the charred, caramelized cubes of orange chipotle tofu skewers are a welcome change from the usual soy-based marinades, and they go great with your favorite salads or soft tacos.

Vegan Orange Chipotle Tofu Skewers

Ingredients:

  • Brown sugar: 1 tbsp.
  • Garlic cloves: 2.
  • Salt.
  • Oregano: 1/4 tsp.
  • Chiptole sauce: 2 tbsp.
  • Ground cumin: 1/2 tsp.
  • Olive oil: 1 tsp.
  • Chiptole sauce: 2 tbsp.

For serving:

  • Salad greens: 2 cups.
  • Orange: 1.
  • Avocado: 1.

Instructions:

  1. Soak the bamboo skewers in cold water if you plan to use them later to avoid scorching them.
  2. Take it out of the box, give it a quick wash in cold water, and then use a tofu press to drain it.
  3. Alternatively, you may wrap it in paper towels or a clean tea towel and place it between two dinner plates, with a hefty weight (a can or two would work well) on top.
  4. Take the tofu out of its packaging, cut it into cubes of the same size, and place it in a container big enough to keep it all in one layer.
  5. In a small saucepan, mix the marinade ingredients while the tofu is draining.
  6. Pour over the tofu, making sure it coats each piece completely, and heat until it gently simmers.
  7. When the cooking time comes, thread tofu cubes onto skewers, saving the leftover marinade for another time.
  8. Use a lot of oil while cooking tofu on a barbecue grill’s flat surface to prevent sticking.
  9. It won’t take long to brown on both sides if you turn them often.
  10. Bake them under a hot grill; just watch them carefully and flip them frequently until they start to get some sear on both sides.
  11. Tacos should be warmed through, if using, on the grill or in a hot fry pan.
  12. Then, fill them with chopped avocado, salad leaves, coriander, barbecued tofu, and either a little amount of the marinade that was set aside or a squeeze of fresh orange juice.

Notes:

Use your preferred chipotle sauce, adjusted for your desired amount of heat. For most folks, a medium-spicy sauce will work well.

Storage Information:

Keep it in a cold place for at least three days. Use an airtight jar for keeping it.
