Ingredients:

  • 1 cup vital wheat gluten
  • 1/4 cup nutritional yeast
  • 2 tablespoons chickpea flour
  • 1 tablespoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon fennel seeds, crushed
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes (adjust to your desired level of spiciness)
  • 1/2 cup tomato paste
  • 1/2 cup water
  • 2 tablespoons soy sauce or tamari
  • 1 tablespoon olive oil

Instructions:

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the vital wheat gluten, nutritional yeast, chickpea flour, smoked paprika, garlic powder, onion powder, crushed fennel seeds, dried oregano, and red pepper flakes. Mix well to ensure all the dry ingredients are evenly distributed.
  3. In a separate bowl, whisk together the tomato paste, water, soy sauce (or tamari), and olive oil until you have a smooth liquid mixture.
  4. Pour the wet ingredients into the bowl with the dry ingredients. Use a spatula to combine everything until you have a sticky, dough-like texture.
  5. Knead the dough for about 3-5 minutes to develop its elasticity.
  6. On a clean surface, shape the dough into a log or sausage shape, approximately 6 inches long.
  7. Wrap the log tightly in aluminum foil, twisting the ends to secure the shape.
  8. Place the wrapped log on the prepared baking sheet and bake in the preheated oven for 60-70 minutes. The pepperoni will firm up and cook through as it bakes.
  9. Remove the Vegan Pepperoni from the oven and allow it to cool slightly before unwrapping it.
