Ingredients

For Shawarma Filling

  • Soy Curls 4 ounces
  • Lukewarm Water 3 cups

Marination

  • Olive oil, 1/4 cup
  • Fresh lemon juice, 3tbsp
  • Garlic cloves 4-5, chopped
  • Salt 1 tsp, or according to taste
  • Cardamom 1 tsp
  • Cinnamon 1/4 tsp
  • Paprika 1 tsp
  • Cumin 1/2 tsp
  • Red pepper flakes 1/4tsp

Shawarma sauce

  • Plain yogurt, 3/4 cup
  • Lemon juice, 2 teaspoons.
  • Tahini 1tbsp, its optional
  • Garlic cloves 2, chopped
  • Fresh dill, 2tbsp
  • Salt 1/4 tsp

Instructions

  1. First, we will prepare Shawarma sauce.

Preparation of Shawarma sauce

  1. Add all the ingredients like Plain yogurt, Lemon juice, Tahini, Garlic cloves, Fresh dill, and Salt in a mixing bowl.
  2. Whisk all ingredients until they combine well. The Shawarma sauce is ready.
  3. Store the sauce in the fridge.

Soak Soy Curls

  1. Add soy curls to a bowl and pour warm water over it.
  2. Let it soak for half an hour or until it becomes softened.

Marinating

  1. Add all the ingredients, like olive oil, chopped garlic, cumin, cardamom, lemon juice, salt, paprika, cinnamon, and red pepper flakes, to a bowl.
  2. Combine all ingredients.
  3. Next, add soaked soy curls to this marinated bowl.
  4. Coat all soy curls, and place this bowl in the fridge for 1 hour.

Frying the soy curls

  1. Once the soy curls have marinated, take a large frying pan.
  2. Add oil to this pan, and heat it over a high flame. Fry marinated soy curls for 10–13 minutes in warm oil.
  3. Each side fry for 5 minutes or until brown and crispy.
  4. The soybean curls are ready.

Assembling

  1. Take pita bread and warm it in a pan on both sides at low flame.
  2. Shift the bread on a plate, and spread shawarma sauce over the bread with the help of a spoon.
  3. Next, add fried soy curls and sliced vegetables. Tightly wrap the shawarma bread with plastic wrappers.
  4. The vegan shawarma is ready. Serve with ketchup or vegan mayo dip.

  • It’s important to remove extra water from soy curls.
  • You can use chickpeas, marinated tofu, vegan steak, tempeh, or cauliflower instead of soy curls.
  • You can marinate the soy curls for a night.
  • Serve the tasty shawarma with vegan tzatziki sauce, tahini sauce, and dairy-free plain yogurt.
  • You can also grill the tofu. It enhances the flavor.
