Vegan Sweet Flakes

Ingredients:

  • Salt: 1/4 tsp.
  • Wheat bran: 1 cup.
  • Ground flaxseed: 2 tbsp.
  • Whole wheat flour: 1 cup.
  • Baking powder: 1/2 tsp.
  • Wet ingredients:
  • Non-dairy milk: 1/2 cup.
  • Water: 1/2 cup.
  • Maple syrup: 3 tbsp.

Instructions:

  1. Set two baking sheets with silicone baking mats or baking parchment on them and warm the cooker to 350 °F
  2. The dry ingredients have to be whisked together in a large bowl.
  3. Stirring constantly, pour the wet ingredients into the dry components while a dough forms and everything is well incorporated.

  5. Using a rolling pin, roll the cookie sheet on top of the wax paper til it is as thin as possible.
  6. The waxed paper prevents dough from clinging to your cutting since it is so sticky.
  7. Your dough is so thin that it nearly seems transparent.

  11. After ten minutes, closely observe.
  12. Lower the oven’s temperature to 275 °F.
  13. After cooling, the bran sheets will feel somewhat rubbery in some places and firm and crispy in others.
  14. Reposition all of the bran flakes back onto one of the baking sheets after ripping each bran sheet into pieces.
  15. Re-enter the microwave at 275 °F and bake and mix it, stirring every two minutes.
  16. You can take the flakes out early if any of them are crispy and brown.

 

Notes:

After baking, allow the flakes to cool fully before keeping them in the closed jar.
Accompany with fresh fruit and homemade oat or almond milk.
