I have made rolls with rice, mushrooms, sweet potatoes, and tamari sauce. All plant-based items are used in the preparation of rolls. It is the best vegan dish. Ingredients
- Sushi Base
- Noori Sheets 4
- Cooked Sushi Rice 4 cups
- Rice Vinegar 2tbsps
- Sugar 1tbsp
- Sea Salt 1tsp
Cooked Fillings
- Shitake Mushrooms 1 cup
- Tamari sauce 1tbsp
- Sweet Potato 1 cup
Raw Fillings
- Sliced Avocado 6
- Carrot Slices 6
- Slices of cucumber 6
- Green Onion 6
Ingredient Notes
Nori Sheets:
- These sheets are Vegan-friendly. You can use sheets to hold the sushi roll. It wraps the rice and other filling items.
Cooked Sushi Rice:
- We used short-grain and black rice. It works better than white rice.
Mushrooms:
- I used Shiitake mushrooms for filling. You can use other varieties of edible mushrooms, tofu, tempeh, and lentils to fill the sushi rolls.
Tamari Sauce:
- Replace it with non-gluten soy sauce.

Instructions
Preparation of Base
- Add salt, vinegar, and sugar in a bowl.
- Heat it in a microwave oven for 4/5 minutes until sugar is dispersed in the mixture.
- You can also warm in a saucepan.
- Place it on a medium flame stovetop. Simmer it for 3/4 minutes.
- Next, add cooked rice to this mixture. Mix it well.
- The rice base is ready. Put aside.
Preparation of fillings
- Add tamari sauce in a bowl. Next, add sliced mushrooms and sweet potatoes to this bowl.
- Coat it well with sauce. Set aside the coated items for ten to twenty minutes.
- After that, shift coated mushrooms and sweet potatoes in a greased baking tray.
- For 15/20 minutes, bake in an oven at 400 degrees until the sides are crunchy.
- Another option is to cook it in a pan over a burner.
Making of Sushi
- Place nori sheets on a sushi mat.
- Next, add the cooked rice mixture over the nori sheets.
- After that, add thin slices of cucumber, onion, avocado, and carrot to this sheet.
- Place all veggies one by one. Next, wrap the sheet.
- Cut it into small sizes using a knife.
- Shift in a serving dish. Enjoy with dipping sauces like tamari sauce.

Storage Information
Fridge:
- We pack the sushi rolls whole in an airtight container and refrigerate them for 2-4 days. Ensure you save sliced rolls properly to prevent them from drying out too soon.
Freezer:
- You can freeze the rolls for up to two months. I don’t suggest freezing it because the nori sheet will lose its crispiness, rice will be soggy, and vegetables will absorb moisture.
