My mum and I have a japchae obsession. When we go to the Korean restaurant where she lives, we both order a main each and then a portion of japchae to share. I couldn’t be happier with that arrangement. ????
Japchae is a noodle dish traditionally made with Korean sweet potato noodles which are like a glass noodle, very long and with a good chew to them. Normally made with veggies and sometimes beef (a lot of online recipes are with beef, but I’ve not seen it on a menu with it). At the restaurant they will cut the super long noodles with a pair of scissors at the table, and then you dive right in.
They are garlicky and sweet and so satisfying. I made this dish last night using the Woks of Life recipe for japchae, minus the beef and basically with all the veg I needed to use up instead of sticking to the ingredient list. This is the best japchae recipe I have tried and took me right back to Korea House in Beeston Nottingham, tucking into a bowl with my momma.
And Korean dumplings because… dumplings need no excuses.
