INGREDIENTS
- One cup of pecans, chopped1/4 cup of applesauce without sugar
- 1/2 cup softened vegan butter
- Half a cup of brown sugar

Pecans:
- Roasting of pecans would add flavor to them prior to incorporating them into the dough. Pecans are nutty-sweet & peppery & add crunchiness to offset the buttery dough.
Vegan butter:
- Buy a good quality of vegan butter that tastes like dairy butter. This brings flavor, moisture & contributes to a soft texture of the cookies.
Brown Sugar:
- Sweet with a caramel & chewy effect. The cookies are also moist & soft due to the brown sugar.
Granulated sugar:
- It balances out the flavor and provides the cookies with a very slight sweetness to help keep the cookies spread out during baking.
Applesauce:
- Used as a substitute in vegan cakes to replace eggs. It makes the dough sticky & it is non-flavor-changing.
Vanilla extract:
- It brings warmth, fragrance & sweetness to the cookie dough. It is combined with pecans, which gives it a bakery taste.
All-purpose flour:
- Provides a framework for the cookies. Yet it produces a fluffy crumb, yet not very dense.
Baking soda:

INSTRUCTIONS
- Adjust the oven heating to 175°C (350°F). Put paper towel on a baking pan.
- Layer a small pan with chopped pecans.
- Toast till aromatic, about 5 minutes. Let it cool.
- Brown sugar, cream vegan butter, and granulated sugar together in a large basin with a mixer till creamy.
- Add vanilla essence & applesauce.
- Beat till incorporated.
- Mix the flour, the baking powder, soda for baking, & salt in a separate basin.
- Add the dry items in the wet items misture.
- Gently stir till dough forms. Avoid over mixing.
- Using a spatula, fold in the toasted pecans. Evenly distribute.
- Leaving room between cookies, scoop dough onto the baking sheet by spoonfuls.
- Bake for 10 to 12 minutes/till the centers appear somewhat soft but the sides are brown.
- Give rest to cookies cool on the tray for 5 minutes.
TIPS
- Toast pecans & add before going to deeper flavours.
- To add crunch, press a half pecan before baking.
- Do not overbasket. As cookies cool, they will set.
- Sprinkle sea salt on top to make it a gourmet meal.

- Keep for the next 1 week. They stay chewy & moist.

May I make these gluten-free?
- Yes. Use a gluten-free free. Check that it has at least xanthan gum to get a good texture.
Can I substitute with a different nut?
