INGREDIENT DIRECTIVES

GARLIC AND ONION POWDER

  • They are the classic aromatics that give your dish a savory depth. Use the fresh minced garlic if you are out of powdered garlic.

PARSLEY

  • Garnishing the dish with freshly chopped parsley will give a vibrant green touch and freshness. You can replace it with fresh cilantro, chives, or even vegan parmesan for variety in the topping.

POTATOES

  • You can choose either the Yukon Gold or Russet potatoes as per your choice. Russets crisp up nicely while Yukon Golds give you a creamy and buttery interior. Make sure all potatoes are the same size by paying attention to their dimensions for uniform cooking.

LEMON JUICE

  • It strengthens and sharpens the flavor and adds brightness, too.

OIL

  • We are using the avocado oil here that provides a deep flavor with a crunchy outside. You can also go for the olive or coconut oil as an alternative if avocado oil is not available to you.

PAPRIKA

  • We are using the smoked paprika here to give our potatoes a warm and smoky flavor. You can use the sweet paprika for a milder flavor, or extra chilli with smoked paprika for an extra spicy version.

  1. Preheat the empty oven to 220 °C.
  2. Cover a sheet pan using the parchment liner for easy removal and cleaning.
  3. Now, first wash all the potatoes properly under tap water, along with scrubbing to remove hard peels.

  6. The cuts should be one-eighth inch deep(only for your reference).

TIPS

  • Scoring the potatoes with one-eighth-inch deep cuts will let the seasoned oil penetrate well.
  • If you soak the potatoes in chilled water for fifteen minutes, you will get the extra crispy edges.
  • You need to arrange the potatoes such that the space is left for the hot air circulation for proper crispness.
  • You can mix that seasoned oil with a small amount of liquid smoke if you like the smoky twist.
  • Preheating the oven is necessary for even roasting of potatoes.
