INSTRUCTIONS
- Cook rice noodles. Drain and cold water rinse and set aside.
- Cut all vegetables into even, thin strips to prepare them. Keep them ready on a platter.
- To prepare the sauce, mix vinegar, water, sugar, soy sauce, lime juice, garlic, and chili flakes in a small pot. Bring to a boil.
- Cook while the sauce slightly thickens after adding the mixture of cornstarch.
- Remove from heat and cool.
- Prepare a shallow dish full of warm water.
- Wet 1 rice paper wrapping with the water, taking 5 to 10 seconds to become soft without being too weak. Position it flat on a wet surface.
- Lay the lettuce leaves as the base, followed by a modest amount of noodles, cabbage, carrots, cucumber, bell pepper, avocado, and herbs in the center of the wrap.
- Fold the sides in, then roll tightly at the bottom all the way up like a burrito.
- Do the same with the other wrappers.
- Toss the rolls with the chilled sweet chili sauce.
SERVING SUGGESTIONS
- You can cut the rolls in half so that they look pretty.
- Also serve with additional dipping sauces like hoisin sauce or peanut sauce.
- Serve with miso soup or a small salad to make up a meal.
TIPS
- Rice paper does not like to stay too long in water; therefore, work fast.
- The rolls should not be overfilled, or they will explode.
- Cover finished rolls with a damp towel in order to prevent drying.
- To make meals in advance, chop vegetables in advance and roll them immediately before eating.
