Vegan Thumbprint Cookies

The cookies are soft, sweet & jam-stuffed Vegan Thumbprint Cookies. These are dairy-free, egg-free, and butter-free cookies. These can be served during the holidays, tea time/as a snack time. Jam-filled Vegan Thumbprint Cookies are easy to make and easy to serve. Put any kind of jam inside you feel like, strawberry, raspberry, apricot/even blueberry. The cookie dough is buttery and crumbly, made of plant-based ingredients only. These cookies are tiny, attractive & naturally sweetened. INGREDIENTS:

  • Half a cup of firm yet soft coconut oil1/4 teaspoon of salt
  • One-third cup of maple syrup
  • Half a teaspoon of baking powder
  • Needs applesauce without sugar at least 1/4 cup
  • One and a half cups of flour (all-purpose)
  • 1/2 a cup of fruit jam
  • One teaspoon of vanilla powder

INGREDIENT NOTES:

Coconut oil:

  • Refined coconut oil for a tasteless flavor. This makes the cookies soft as well. Do not let it melt, it has to be soft.

Maple syrup:

  • This grade natural sweetener gives great flavour & retains the recipe’s refined-sugar-free. Alternatively, you can use Agave nectar.

Applesauce:

  • You can replace the applesauce with eggs in this recipe. It serves to glue the dough and brings a tender crumb.

Flour:

  • All-purpose flour will make a cookie-like texture for a gluten-free substitute. Use a 1:1 baking blend.

Salt & baking powder:

  • These two help balance out the sweetness and give some leavening.

Jam:

  • Select a rich and fruity jam with no sugar added. Strawberry, raspberry & apricot make great choices.

Vanilla:

  • Adjusts the cookie foundation to a warm smell even with minor sweetness.

INSTRUCTIONS:

  1. Set the oven temperature to 175°C (350°F) and warm up the oven. Put paper towels on a baking pan.
  2. Combine the maple syrup & coconut oil in a mixing bowl & beat till smooth & creamy.
  3. Add vanilla essence & applesauce. Mix carefully.
  4. Mix the flour, baking powder, & salt in another basin.
  5. Now mix the all dry items in this wet mixture. While a dough forms, stir.
  6. Refrigerate the dough for half an hour with a lid on.
  7. Scoop out 1 tablespoon of cold dough and form into a ball.
  8. Make the balls 2 inches apart of the mixture and put it on the backing sheet.
  9. You can use your thumb and the back of the spoon, make a tiny gap in the center of each cookie.
  10. Place a half-spoonful of your preferred jam into each space.
  11. Cook cookies for the next ten to twelve minutes, or till the edges of cookies are getting start to get golden.
  12. Put them cool on the tray for 5 minutes, then fill them to a cooling place.
  13. Store for later or enjoy when completely chilled.

TIPS:

  • Have firm jam so that it does not flow as you bake. Do not use jam that is too runny.
  • Make people roll other dough evenly so that it can bake uniformly.
  • To add more crunch to the cookies, bake slightly longer at the two-minute mark.
  • Powder with cooking sugar after cooling to give a holiday touch.

STORAGE INFORMATION:

REFRIGERATOR:

  • Keep the chilled cookies in the refrigerator for a minimum of five days in a sealed package. For the greatest texture, let them rest at room temperature before serving.

FREEZER:

  • Place the baking parchment between the cooked cookies & freeze them in layers. Keep for as long as two months in a sealed airtight container.

FAQS:

May i use an other oil with the replacement of coconut oil?

  • Yes. You can use vegan butter; however, the texture will be slightly soft.

Which jam is good?

  • Thicker jams hold their shape better when baking. Go for the no-sugar-added varieties if you prefer.

Can I prep ahead of dough?

  • Yes. The dough can be frozen for the entire night. After 10 minutes of resting, roll it.

Do these cookies spread easily?

  • Not much. Chilling will cause them to retain their shape. Gently press into a nice center.
