Chocolate Chip Banana Bars

INGREDIENTS:

  • Mash three ripe bananas.
  • 1/3 cup agave/maple syrup
  • 1/4 cup of neutral/melted coconut oil
  • One teaspoon of vanilla powder
  • 1 and a quarter cups of whole-grain or common flour
  • Half a teaspoon of baking soda
  • 1/2 a teaspoon of baking powder
  • 1/4 tsp salt & 1/2 tsp optional ground cinnamon
  • Half a cup of vegan chocolate chips.

INGREDIENT NOTES

Bananas:

  • Take the taste and moisture to the next level with soft, flecked-brown bananas. The sweeter, the better.

Maple syrup:

  • Tastes smooth, sweet, and natural. You can instead use agave or date syrup.

Oil:

  • Coconut oil adds just a bit of richness. You can use avocado oil/canola.

Vanilla:

  • Accentuates sweetness, warmth, and banana & chocolate.

Flour:

  • Use white, whole grain/ gluten-free 1:1 flour, if desired.

Leavening:

  • Baking soda and powder help the bars to rise and keep light.

Salt:

  • A small amount of salt counterbalances sweetness and intensifies chocolate taste.

Cinnamon:

  • Optional, but makes the place avenue-ist.

Chocolate chips:

  • Use the dairy-free chocolate chips. Mini chips melt, covering more evenly.

INSTRUCTIONS:

  1. Set the oven temperature to 175°C (350°F).
  2. You need to use parchment towel to line your baking surface
  3. In a large bowl, mash bananas till they are soft and velvety.
  4. Pour in oil, vanilla, & maple syrup. Blend till completely combined.
  5. Now add these items (baking powder, flour, cinnamon, baking soda, & salt).Gently stir till almost blended.
  6. Avoid mixing too much.
  7. Add chocolate chips & fold.
  8. Pour the batter onto the baking pan that has been lined. Make the top smooth.
  9. If desired, top with more chocolate chips. After backing this for 22 to 25 minutes check it by a toothpick.
  10. Give it ten minutes to cool in the pan. After that, remove & let cool fully on a cooling surface.
  11. Serve after cutting into 12 bars/squares.

TIPS:

  • Use parchment paper to handle any mess when bringing out the bars.
  • Let it cool in bars before cutting. This does two things: it makes them stay in shape.
  • To add nutty flavor, add in chopped walnuts or pecans.
  • Use a tablespoon of ground flaxseed to get more fiber.
  • If the bananas are not sweet enough, add 1 to 2 teaspoons of coconut sugar.
  • A sprinkle of coarser salt on top takes it sweet/salty for you.

STORAGE INFORMATION:

Room Temperature:

  • Store bars on the counter for two days in an air-tight jar.

Refrigerator:

  • Keep for at least six days in a tightly sealed container. Before eating, let it settle.

Freezer:

  • For a minimum of two months, wrap each bar separately and place them in the freezer. Warm in the microwave or let thaw overnight.

FAQS

Are these gluten-free?

  • Yes. Make it with a gluten-free 1:1 flour. Oat flour can be used, but with a softer texture.

Are these oil-free?

  • In their place, you may use 1/4 cup nut butter, or extra mashed banana, which may be a bit dense.

May I use less sugar?

  • Yes. Using 1/4 cup maple syrup or none at all (if your bananas are extra-ripe) may be worth a try.

But what will happen when I do not have chocolate chips?

  • Use raisins, dates/chopped nuts in place of chopping a vegan chocolate bar.

May I cook them in a loaf tin?

  • Yes, but make it a little longer in the oven, say 35 to 40 minutes.
