  • You need to remove seeds from the dates and soak them in hot water for ten minutes. You may use any of the regularly available dates, but we recommend you go for the Medjool dates for this recipe. These dates provide a creamy and caramel-like flavor with natural sweetness.

BANANA

  • Using thinly-sliced bananas will be best for creaminess in parfait layers. You can skip it if you want to.

MILK

  • We are using the almond milk here. You may use any plant-based milk, like cashew, coconut, soy, oat, etc., to adjust the consistency of the caramel sauce.

ICE CREAM

  • Choose milk-free vanilla-flavored ice cream of any trusted brand for layering. You may go for frozen banana nice cream to lower the calories.

COCONUT CREAM

  • It is the thick part of chilled coconut milk that makes your chocolate sauce creamy and velvety. You may use oat or soy cream if preferred.

INSTRUCTIONS

  1. First of all, drain the soaked dates.
  2. Add vanilla essence, drained dates, salt, and almond milk to a high-speed blender.
  3. Beat until you get a thick and silky paste.
  4. Add some vegan milk if you find it too thick.
  5. Your date caramel is ready.
  6. Now, move towards making the chocolate sauce.
  7. Keep a saucepan with dark vegan chocolate chips with coconut cream on the normal flame.

LAYERING
