COCONUT CREAM

  • Adding the chilled coconut cream will add richness. You may use the vegan yogurt instead of coconut cream as a substitute.

BLUEBERRIES

  • Fresh blueberries are required, or you can also use frozen ones. Just defrost and drain the canned blueberries before use. We advise you to go for the fresh ones as they will have the bright color and better texture as compared to the frozen ones.

THICKENER

  • Use the cornstarch or arrowroot powder to thicken the lemon cream. Both options are naturally vegan and free from gluten.

SWEETENER

  • We are using agave nectar, coconut sugar syrup, or Maple syrup as a vegan sweetener to sweeten the parfait.

INSTRUCTIONS

  1. Mix maple syrup, coconut cream, vanilla essence, cornstarch, lemon juice, and zest in a saucepan.
  2. Keep it on a normal flame while stirring continuously till it thickens.
  3. Then, turn off the flame and cool it down to room temperature.
  4. If you wish, then mix the blueberries with a tablespoon of maple syrup.

ASSEMBLING

  1. Now, add a full spoon of granola at the base of serving jars.
  2. Then, add a layer of lemon cream over the granola.
  3. Now, place the blueberries on the cream layer.
  4. Repeat the layers similarly till you reach the top.
  5. Top it with a sprinkle of granola, lemon zest, and blueberries.

FREEZING

  • Assembled parfaits will lose their texture upon defrosting. Freeze the lemon cream in a closed box for one month. Defrost it the night before assembling.
