INGREDIENT NOTES
BUTTER
- Choose a trusted brand for vegan butter, like Miyoko’s or Earth Balance, to have flaky and light scones. If you want slightly different flavors than go for solidified coconut oil.
CRANBERRIES
- Adding the chopped fresh or frozen cranberries will add bright color and tartness. Use the frozen cranberries directly.
FLOUR
- We are using all-purpose flour for structuring the scones. Whole wheat pastry flour can be a fiber-rich replacement, or you can also use the gluten-free flour if required.
ORANGE ZEST AND JUICE
- They will add a natural citrus aroma and tang that people will love. You may use lemon instead if you want.
MILK
- We are using unsweetened almond milk in our recipe instead of dairy milk. You may replace it with any plant-based milk as per your requirement.
SUGAR
- Using coconut sugar adds mild caramel sweetness. The positive aspect is that it is way less refined than white sugar. Brown or date sugar can also be used for similar results.
VINEGAR
- Any vinegar or lemon juice that reacts with baking powder will give you fluffy and tender scones. We have apple cider vinegar on hand, that’s why we are using it.

- Bake them for 18-20 minutes.
- After baking, bring the scones to normal surrounding conditions.
- Drizzle the glaze over them after cooling if you want.

TIPS
- Overmixing the dough will make scones hard or dense.
- Sprinkle the raw sugar after brushing with a little almond milk to have a crispier crust.
- The signature flaky texture will be achieved by using the cold vegan butter.
- Always use the fresh orange zest for the best flavor.
STORAGE DIRECTIONS
FRIDGE
- Pack the remainder of the scones in a tightly sealed container to preserve them in the fridge for 5-6 days.
FREEZER
- They are freeze-friendly. Wrap each scone individually in a plastic wrap. Then keep all of them in the freezer-friendly bag or box. Defrost and warm in the oven till crisp again. Enjoy them whenever you want in the next 60-70 days.
FAQs
How to prevent my scones from spreading?
- Avoid overkneading the dough, and make sure your vegan butter is cold.
Can I make them oil-free?
- Yes, replacing the vegan butter with unsweetened applesauce can lower the calories and make your scones free from oil. The texture will be a little denser.
Will the dried cranberries work in place of fresh ones?
- Soak dried cranberries in orange juice for ten minutes, then mix them with the dough so they get a little softer.
