INGREDIENT NOTES:

LASAGNA NOODLES:

  • These provide the basis of lasagna in this recipe. We utilize the uncooked ones to layer this lasagna. These noodles will soak up the liquid slowly as they cook. If you need an alternative, use lasagna noodles that do not have any gluten in them.

MARINARA SAUCE:

  • This sauce is useful in cooking the lasagna noodles in the crockpot. Marinara sauce also provides moisture to the noodles and the overall dish. Make a sauce at home if you need a substitution.

CRUSHED TOMATOES:

  • Tomatoes are necessary since they provide moisture to the noodles and give a deep taste to the overall dish. For an alternative, use tomato passata.

TOFU:

  • Tofu can easily give a creamy element to the lasagna dish. You do not need ricotta cheese when using this ingredient. Using cashews after blending them will also work fine.

SOY MILK:

  • Since this is a vegan recipe, we cannot use dairy. Hence, to include moisture, we include soy milk in this dish. Oat or almond milk is a great alternative for this.

NUTRITIONAL YEAST:

  • This not only has nutrients in it, but it also provides a cheese-like taste in the lasagna. There is no alternative for this ingredient.

VEGETABLES:

  • All the veggies make this lasagna fulfilling and nutritious. You get different colors in the lasagna due to the different veggies. Other ideas for veggies are carrots, bell peppers, or eggplant.
