Ingredients:

  • Broccoli 680g

  • Roasted almonds 70g

  • Breadcrumbs 40g
    (If you are allergic to gluten, use the gluten-free breadcrumbs).
  • Extra virgin olive oil 3 tbsp.
  • Fresh Parsley chopped 1 handful
  • Fennel bulb 1 medium
    ( It has a mild and sweet flavor and is the perfect addition to the salad. You can also add carrots instead).
Dressing:
  • Extra virgin olive oil 1/4 cup
  • Black pepper
  • Kosher salt as per taste
  • Red pepper flakes 1/2 tsp.
  • Dijon mustard 1 tsp.
  • Lemon juice 3 tbsp.
  • Minced garlic 2 cloves
  • Diced shallot 1 medium
  • Maple syrup 3 tbsp.
  • Golden raisins 3 tbsp.
    (It can be any dried fruit that gives a fruity flavor to the salad)
  • Fresno peppers 1 or 2
    ( best to balance the sweet and spicy flavor in the salad).

Instructions:

Dressing:
  1. Take a saucepan, add the Fresno pepper, maple syrup, and raisin, and simmer them for almost 5 minutes, then add shallots and cook again for few minutes.
  2. Take them out into a glass jar and leave it to cool for a few minutes.
  3. Add the mustard, garlic, lemon juice, olive oil, and red pepper flakes.
  4. Shake them well to combine everything properly.
Preparing broccoli:
  1. Wash the broccoli florets properly and dry.
  2. Cut the broccoli and separate the stalks and the buds.
  3. Put it into the chopper and chop finely.
Preparing fennel:
  1. Cut the fennel bulb horizontally and chop it crosswise using a sharp knife.
Toasting breadcrumbs:
  1. Take a pan and add the olive oil to it.
  2. Add the breadcrumbs to it.
  3. Season it with some pepper and salt and fry until golden brown.
Assembling:
  1. Take a large deep bowl, add up the broccoli, parsley, and fennel, and add up the prepared dressing over them.
  2. Mix them with the help of spoon until well combined.
  3. Mix them by adding the dressing gradually until the required texture is attained.
  4. Add some breadcrumbs and the nuts for the extra crunchy flavor, also season it with pepper and salt.
