Ingredients

  • Olive Oil 2tbsp
  • Chopped large onion 1
  • Crushed Garlic Clove 4 cloves
  • White Wine 1/2cup
  • Vegetable Stock 4cups
  • Orzo Pasta 1/2cup
  • Chopped Sun-dried Tomatoes 125g
  • Frozen Spinach 275g
  • Dried Thyme 3/4tsp
  • Dried Dill 3/4tsp
  • Canned Butter Beans 14oz
  • Vegan Cream 2/3cup
  • Lemon Juice 1tbsps
  • Nutritional yeast 4-5tbsps
  • Ground Black pepper, to taste

Recipe Ingredient Notes

White Wine: It’s optional. You can skip it if you don’t like its flavor.
Vegetable Broth: Use good quality broth.
Vegan Cream: We will add any type of vegan cream like soy, cashew, or Oat cream.
Butter Beans: It adds a creamy, butter flavor to the dish. Instead of this, you can add chickpeas, tofu, or cannellini beans. These options give protein and texture.

Instructions

  1. Put a saucepan over a medium flame and add olive oil. Heat it over a medium heat.
  2. Add chopped onions to this oil. Sautee it for 6-7 minutes until it is golden brown.
  3. Now, add garlic and simmer it for 2-3 minutes.
  4. Add white wine to this garlic and onion paste. Boil it until the wine is absorbed.
  5. Next, add vegetable broth, frozen spinach, orzo pasta, thyme, sun-dried tomatoes, and dill to this saucepan.
  6. Turn down the flame from medium to slow.
  7. Cook it for about 20-30 minutes, or until the pasta is tender.
  8. After that, add vegan cream, nutritional yeast, butter beans, lemon juice, and crushed black pepper.
  9. Mix all ingredients. Cook it for an additional 2-4 minutes, or until the beans are hot.
  10. Delicious Vegan Spinach Orzo is ready. Top it with chopped basil, oregano, or parsley.

Freezer: We can’t freeze the spinach orzo pasta because cream, beans, and spinach are used. It will give a mushy and bitter flavor.
