INGREDIENT NOTES:
ZUCCHINI:
- Zucchini is the main item to prepare the rolls. It will make your dish softer as well as juicier. Mash pumpkin and use that as an alternative idea.
ALL-PURPOSE FLOUR:
- Your zucchini rolls will form a shape when using all-purpose flour. It will help in avoiding breaking of them as well.
WATER AND FLAXSEED:
- We will make a flax egg to use in this recipe. This flax egg will help combine all the ingredients to keep the shape of your zucchini rolls. Use chia seed mix for another option in your recipe.
UNSWEETENED VEGAN MILK:
- The batter for your rolls will become smoother if you add vegan milk to it. Be sure that you are using unsweetened milk for this recipe. Any unsweetened vegan milk, like oat or almond, can work.

INSTRUCTIONS:
- Heat the oven to 180°C.
- Take your baking tray and place parchment paper on it.
- Now grate your zucchini and squeeze water from it using a kitchen towel.
- Be sure to squeeze it properly.
- Use a smaller bowl to combine water and flaxseed.
- Rest this mixture for five minutes for it to get thicker.
- Then take a big bowl.
- Add olive oil, vegan milk, flax egg, and zucchini to it to mix.
- Then, include the dry items in the bowl as well to make a mix similar to dough.
- Now, use some parchment paper to place it on an even surface.
- Add some zucchini mixture to the parchment piece.
- Make a small rectangle of quarter-inch thickness on it by flattening it.
- Include shredded vegan cheese on top of it as well.
- Roll the rectangle carefully in the parchment to create a roll shape.
- Add this to the baking tray with the closed side downwards.
- Do this with the remaining mixture to make more rolls.
- Baking time for them will be 30 minutes.
- Cool your rolls first and then remove the parchment from them to eat.
