INGREDIENTS:
- 1/4th tsp. of powdered garlic
- Zucchini(normal in size), two
- 1 tbsp. of olive oil
- Half a cup of marinara sauce
- 1/4th tsp. of powdered onion
- Vegan Mozzarella cheese(shredded), three-fourth cup
- 1 teaspoon of Italian seasoning
- Nutritional yeast, two tbsp.
TOPPINGS(OPTIONAL):
- Vegan pepperoni
- Black olives(chopped)
- Chopped basil, fresh
- Bell peppers(diced)
- Sliced mushrooms
INSTRUCTIONS:
- Warm up the oven(empty) to 200 °C or air fryer(if using) at 193 °C & get to work.
- After washing & drying the zucchini, slice it into one-fourth-inch-thick round slices.
- Utilize the towel to soak up the extra moisture from every wedge of zucchini.
- Grab a baking sheet/tray(parchment-lined).
- Apply a light coat of oil on both sides of each zucchini slice.
- Arrange them in a sequence on that baking tray/sheet.
- Place the baking sheet with zucchini slices in the oven for ~seven mins.
- As you see, the zucchini starts releasing the moisture & becomes a little tender, take them out of the oven.
- Keep them on the counter to cool them slightly.
- Now, spread the marinara sauce on each slice.
- Then, sprinkle the vegan Mozzarella cheese over the marinara sauce.
- Sprinkle with powdered garlic, onion, Italian herbs, & nutritional yeast to season.
- You may go for the toppings like peppers, olives, & mushrooms if you want.
- Return the baking tray to the oven for the cheese to melt.
- If you want a crisp version of cheese, shift the tray to the top rack near the oven’s flame.
- In a couple of mins, you will get the nice golden & crispy cheesy surface.
- Garnish this with chili flakes & basil.

TIPS:
- You need to completely soak the moisture of zucchini slices to prevent your bites from being soggy.

- We usually don’t recommend freezing the zucchinis as they become soggy upon defrosting. If you freeze them, then reheat them directly from the frozen state till they become crisp again.

- Never use a microwave to reheat the pizza bites, as they will become soggy in the microwave.
