BBQ Jackfruit Sandwiches Recipe:

Ingredients: For the BBQ Jackfruit:

  • 2 cans (20 oz each) young green jackfruit in water or brine, drained and rinsed
  • 1 cup vegan-friendly BBQ sauce
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper to taste
For the Coleslaw:
  • 2 cups shredded cabbage (green and purple)
  • 1 large carrot, grated
  • 1/4 cup vegan mayonnaise
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon maple syrup or agave nectar
  • Salt and black pepper to taste
For Assembly:
  • 4 whole grain burger buns
  • Sliced red onion (optional)
  • Sliced pickles (optional)

Instructions:

  1. Prepare the BBQ Jackfruit: Using your hands or a fork, shred the jackfruit pieces to resemble pulled pork. In a skillet, heat olive oil over medium heat. Add the shredded jackfruit, garlic powder, smoked paprika, salt, and black pepper. Sauté for a few minutes until the jackfruit starts to brown slightly.
  2. Add BBQ Sauce: Pour the BBQ sauce over the sautéed jackfruit. Stir well to coat the jackfruit with the sauce. Reduce the heat to low, cover the skillet, and let the jackfruit simmer for about 15-20 minutes, allowing the flavors to meld and the jackfruit to become tender.
  3. Prepare the Coleslaw: In a mixing bowl, combine the shredded cabbage and grated carrot. In a separate small bowl, whisk together the vegan mayonnaise, apple cider vinegar, maple syrup, salt, and black pepper. Pour the dressing over the cabbage mixture and toss until the coleslaw is well coated.
  4. Assemble the Sandwiches: Lightly toast the burger buns if desired. Place a generous amount of the BBQ jackfruit on the bottom half of each bun. Top with a portion of coleslaw. Add sliced red onion and pickles if using. Place the top half of the bun over the fillings.
