EQUIPMENT

INGREDIENTS:

  • 8 ounces of fettuccine noodles without oil
  • One tablespoon of olive oil
  • One tablespoon of lemon juice
  • Three minced garlic cloves
  • One and a half cups of non-sweet plant-based milk
  • One cup of cooked cauliflower or half a cup of soaked raw cashews
  • A single tablespoon of powdered onion
  • To taste, add salt and black pepper.
  • Nutmeg pinch (optional)
  • Two tablespoons of nutritional yeast
  • Four little circular loaves of crusty or sourdough bread
  • For the garnish, chopped parsley

INGREDIENT NOTES

Fettuccine:

  • Any vegan pasta, gluten-free, optional. Fettuccine provides a high surface area to trap the sauce.

Cashews or cauli.

  • The sauce has been made creamy & rich with the use of cashews. Mix in hot water for ten minutes. Cauliflower is white & creamy, also without much weight.

Plant Milk:

  • Use only unsweetened and plain. Thickening is done with oat/soy milk.

Nutritional Yeast:

  • Flavors without dairy in a cheesy way. Taste adjust.

Bread Bowls:

  • Take round loaves of a thick crust & rather small size. Hollow them just before serving so that they remain fresh.

Seasoning:

  • Nutmeg gives body. The sauce is aromatic because of garlic & onion powder.

INSTRUCTIONS:

  1. Set the oven temperature to 175°C (350°F).
  2. Cut each bread loaf’s top off.
  3. To make bowls, scoop out the inside.
  4. Arrange the bowls on a platter. Bake for ten minutes.
  5. Prepare fettuccine according to the packet. After draining, set it aside.
  6. In a pan, heat the oil. Garlic should be sautéed for about two minutes.
  7. Put the soaked cashews (or cauliflower), plant milk, nutritional yeast, sautéed garlic, lemon juice, onion powder, salt, pepper, & nutmeg in a blender.
  8. Blend till smooth & creamy in appearance.
  9. Fill the pan with sauce. Stir frequently & cook on low for 3 to 5 minutes.
  10. Pasta should be added to the sauce. Toss to coat.
  11. Fill spaghetti dishes with bread.
  12. Sprinkle with parsley.
  13. Warm up & serve.

TIPS

  • No need to boil the sauce, just warm it slowly so it does not curdle.
  • Incorporate mushrooms or spinach that have been sautéed as additional vegetables.
  • Put used inner crusts into the croutons or breadcrumbs.
  • Prepare the sauce well in advance and refrigerate it for 2 days before.
  • Have as a side salad or vegetables that have been roasted.

STORAGE INFORMATION:

Refrigerate:

  • You can store leftover pasta & sauce in closed containers for up to three days (not in bread). Add a little plant milk & reheat gently.

Store in the freezer:

  • The Alfredo sauce keeps well for at least a month. The bread bowls go mushy if you freeze them.
