Vegan Cream Fruit Passion Dessert is creamy, tangy & sweet. It is concocted out of a new passion fruit and vegetarian products. This dessert is not heavy, but it is tasty. Vegan Passion Fruit Cream Dessert can be enjoyed during summer or any other period when you want something with fruit. It is pretty enough to be simple. You can serve it either in glasses or jars. The passion fruit adds the tropical touch, and the creamy bottom makes it smooth and fulfilling. It does not contain eggs, gluten & is also milk-free. You may prepare it in advance to refrigerate it.

INGREDIENTS:

  • Half a cup of either natural or frozen passion fruit pulp
  • One (13.5-ounce) can of full-fat coconut cream
  • Two teaspoons of sweet maple syrup
  • One tablespoon of cornstarch
  • Half a teaspoon of vanilla flavoring
  • A pinch of turmeric for color (optional)
  • One tablespoon of lemon juice

INGREDIENT NOTES:

Passion Fruit pulp:

  • Frozen/fresh passion fruit can be used. You may strain out the seeds when using fresh. The pulp is sour & sweet and has a tropical taste.

Coconut Milk:

  • Use coconut, which is milked in full-fat, canned. It produces a thick and creamy consistency. Choose not low-fat milk/boxed milk.

Maple Syrup:

  • It also gives natural sweetness. Agave/date syrup can also be used. Season to liking.

Cornstarch:

  • Creams it up. Blend with coconut milk that is not warm. It provides a pudding-like consistency.

Turmeric (Optional):

  • Brings in a bright yellow tone. A pinch should be enough that it does not influence the taste.

INSTRUCTIONS:

  1. Mix the corn starch and ¼ cup of coconut cream in a small bowl.
  2. Pour the remaining coconut milk into a cooking pot.
  3. If using, add turmeric, vanilla, & honey (maple syrup).
  4. Set the heat to medium and whisk gently.
  5. The cornstarch mixture should be added.
  6. Stir continuously for five to seven minutes to ensure it thickens.
  7. Take off the heat once it’s thick.
  8. Add passion fruit pulp & lemon juice and stir.
  9. If necessary, taste & adjust the sweetness.
  10. Transfer the mixture into bowls / serving glasses.
  11. At room temperature, allow them to cool.
  12. After that To set, place it in the freezer for two to three hours.
  13. Serve cold.
  14. Add a couple of mint or passion fruit seeds as a decoration.

TIPS:

  • Blend the pulp if you don’t want any texture.
  • For an added crunch, place a cookie crust or graham cracker on the bottom.
  • Chilling glasses before filling aids in their faster setting.
  • Spread the coconut shreds on top for garnish.
  • Make two batches for festivities/guests.
  • Wash the pulp from passion fruit in order to remove the seeds.
  • Top with coconut whipped cream and serve.
  • Add chia seeds for added fiber & texture.

STORAGE INFORMATION:

FRIDGE:

  • Store in covered jars/cups in your freezer. Maintains for as long as three days. Serve immediately from the freezer.

FREEZER:

  • It is not advised to freeze. The texture is altered. Consume only cold.

FAQs:

Can I replace passion fruit with some other fruit?

  • Yes, Pulp of mango can be used/pineapple/orange pulp can be used. It will be different in taste, but it remains tropical & fresh.

May I prepare it in advance?

  • Yes. It can be made & chilled for at least 2 days ahead of when it will be served. Good with serving & cooking.

Are you too sour, this dessert?

  • No. It is balanced using the honey (maple syrup). However, you may add more syrup to taste, as you prefer it to be sweeter.

How do I substitute coconut milk?

  • Well, it will taste richer but will not be so creamy. Either use cashew cream/almond milk thickened with extra cornstarch.
