READY STEADY COOK CHALLENGE with My good friends at Just Footprints agreed

READY STEADY COOK CHALLENGE with justfootprintschester ???? ????

My good friends at Just Footprints agreed to do a blind ingredient challenge with me this week. I was given a bag of mystery ingredients, the contents of which came in under a fiver at £4.80. And I challenged myself to come up with something using only the contents of the bag and what was already in my kitchen. (I do have a very well stocked kitchen so it’s not THAT much of a challenge, but still! ????)

The bag;
Bulgar wheat
Garlic granules
Salt
Dried cranberries
Sun dried tomatoes
Caraway seeds
Dried apricots
Walnuts

It all sounded very Middle East/ North Africa /Turkey to me so I dug about in my kitchen and came up with

Turkish borek and bulgar wheat salad ????????

Borek are pastries made with a similar pastry to filo (yay got that hanging around after the giant samosa pie), sometimes filled with mince, spices and dried fruit. So I had to give that a go. I decided to make my mince using the walnuts and some mushrooms.

The Turkish bulgar wheat salad is a dish I have never tried before, the cooked bulgar is flavoured with tomato and chilli then mixed with salad veggies, herbs and fruit.

Full recipes for both Walnut and mushroom borek and Turkish bulgar wheat salad on their way!
