INGREDIENTS
- One and a half cups of homemade / store-bought vegan cottage cheese
- One cup of high-fat canned coconut milk
- An additional tablespoon of agave / maple syrup
- A single teaspoon of pure vanilla essence
- One tablespoon of optional chia seeds for thickness
- Half a cup of freshly chopped mango
- ½ cup of chopped fresh pineapple
- Two teaspoons of unsweetened coconut shreds
- One tablespoon of lime juice
- One pinch of sea salt
- Coconut flakes & additional fruit for garnish
INGREDIENT NOTES:
Vegetable cottage-cheese:
- Select cottage cheese made of almonds or soy. It must be delicate and mild tasting. You can also make it at home with tofu and lemon juice.
Coconut milk:
- With Full of fat coconut milk should be used in cans. It adds creamy profile and rich tropical flavor to the pudding.
Tropical fruits:
- Mango and pineapple are sweet and juicy fresh. If fresh fruits aren’t available, you can substitute frozen fruits that have frozen.
Maple or agave syrup:
- The blending of these natural sweeteners enables the pudding to have a smooth sweetness.
Chia seeds:
- They offer more fiber and omega-3 and help thicken the pudding. Not compulsory but useful.
Lime juice:
- Makes it light and adds tropical flavoring.
Vanilla:
- Only a touch adds a taste of dessert and warminess to the mixture.
Sea salt:

INSTRUCTIONS:
- Put the vegan cottage cheese, coconut milk, sea salt, lime juice, vanilla, and maple syrup in a blender.
- Blend till extremely smooth and silky. It should take between 30 and 60 seconds.
- Transfer the blend into a large basin.
- If using, stir in the chia seeds.
- Add the pineapple & mango, chopped. Gently stir to mix.
- Add the coconut shreds & stir.
- Sample the concoction. If necessary, adjust the lime or sweetness.
- Transfer the pudding into jars, bowls, preferably little serving cups.
- For at least two hours, once it is completely chilled and somewhat thickened, cover and place in the fridge.
- Top each pudding with coconut flakes and more fruit when ready to serve.

- For the extra flavor you can add a tiny amount of ground ginger/cinnamon.
- To create it more smooth you can blend all the fruits into the pudding.
