Recipe: Vegan Pumpkin Bread

  • 1 1/2 cups canned pumpkin puree
  • 1/2 cup unsweetened applesauce
  • 1/2 cup maple syrup or agave nectar
  • 1/4 cup coconut oil, melted
  • 1/4 cup almond milk (or any plant-based milk)
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground ginger
  • 1/2 cup chopped nuts or chocolate chips (optional)
  • Vegan cooking spray or coconut oil for greasing the pan

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch (23×13 cm) loaf pan with vegan cooking spray or coconut oil.
  2. In a large mixing bowl, combine the canned pumpkin puree, unsweetened applesauce, maple syrup or agave nectar, melted coconut oil, and almond milk. Mix well until all the wet ingredients are fully combined.
  3. In another bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, ground cinnamon, ground nutmeg, ground cloves, and ground ginger.
