Recipe: Vegan Pumpkin Bread

  • 1 1/2 cups canned pumpkin puree
  • 1/2 cup unsweetened applesauce
  • 1/2 cup maple syrup or agave nectar
  • 1/4 cup coconut oil, melted
  • 1/4 cup almond milk (or any plant-based milk)
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground ginger
  • 1/2 cup chopped nuts or chocolate chips (optional)
  • Vegan cooking spray or coconut oil for greasing the pan

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch (23×13 cm) loaf pan with vegan cooking spray or coconut oil.
  2. In a large mixing bowl, combine the canned pumpkin puree, unsweetened applesauce, maple syrup or agave nectar, melted coconut oil, and almond milk. Mix well until all the wet ingredients are fully combined.
  3. In another bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, ground cinnamon, ground nutmeg, ground cloves, and ground ginger.
  4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix; a few lumps are fine.
  5. If desired, fold in the chopped nuts or chocolate chips into the batter.
  6. Pour the batter into the greased loaf pan, spreading it evenly.
  7. Bake in the preheated oven for about 50-60 minutes or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
  8. Remove the pumpkin bread from the oven and allow it to cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely.
