Ingredients:
- 12 oz (340g) whole wheat or gluten-free pasta (of your choice)
- 2 cloves garlic, minced
- 1/4 cup fresh basil leaves
- 1/4 cup fresh parsley leaves
- 2 ripe avocados, peeled and pitted
- 1/4 cup unsweetened almond milk (or any other plant-based milk)
- 2 tablespoons fresh lemon juice
- 2 tablespoons nutritional yeast (optional, for a cheesy flavor)
- 1/2 teaspoon red pepper flakes (adjust to your desired level of spiciness)
- Salt and pepper, to taste
- Cherry tomatoes and extra basil leaves, for garnish (optional)
Instructions:
- Cook the pasta according to the package instructions until al dente. Drain the pasta and set it aside.
- In a food processor or blender, combine the ripe avocados, minced garlic, fresh basil, fresh parsley, unsweetened almond milk, fresh lemon juice, nutritional yeast (if using), red pepper flakes, salt, and pepper.
