Vegan Simnel Cake

Introducing you to the delicious and traditional British dish of Vegan Simnel Cake. It is a fruitcake that includes all the plant-based substitutes that meet vegan standards. Moreover, this recipe is filled with different dry fruits inside. Furthermore, it’s ideal for celebrating Easter. It is the traditional recipe for Easter. This cake has a layer of almond marzipan in the center.

Vegan Simnel Cake

Ingredients:

  • Apricot jam, 2 tbsp.
  • Marzipan, 24 oz.
  • Soy milk, 225 ml
  • Sliced cherries, 100g
  • Dried cranberries, 100g
  • Mixed dry fruits, 300g
  • Lemon and orange zest,
  • finely grated brown sugar, 190g
  • Pumpkin spice, 2 tsp.
  • Baking soda: 1 1/2 tsp.
  • Vegan block butter, 190g
  • Baking powder: 1 1/2 tsp.
  • All-purpose flour, 380g
  • For the syrup: granulated sugar, 80g
  • Orange juice, 100 ml

Instructions:

  1. Bake the cake the day before you plan to decorate it. To stop the cake from spilling over the sides, grease and line a circular cake tin with two layers of cooking paper.
  2. Mix the flour, then add the baking powder and mix it well then add the bicarbonate of soda. Mix it perfectly, then add the mixed spices together in a large mixing basin. When there are no more butter lumps and the mixture resembles fine breadcrumbs, add the cubed vegan butter and crush it with your fingertips.
  3. Add the milk to create a batter after thoroughly blending the sugar.
  4. Use the orange and lemon zest, and then mix the mixed dried fruit, and then mix all the things perfectly, and then add the dried cranberries and glace cherries.
  5. Make the syrup as the cake bakes. Combine the sugar, orange juice, and rum in a small saucepan.
  6. Stir while the sugar melts over low heat. Put aside. Take the cake out of the microwave once it’s finished. and generously brush the top with syrup.
  7. After a few moments of cooling in the pan, gently turn the cake out onto an electrical rack.
  8. Drizzle the leftover syrup over the cake; turn it over and drizzle some over the bottom, if you’d like.
  9. Slide the cake out onto a dish, bottom side down.
  10. Place little pieces of marzipan in any gaps to finish the surface flawlessly.
  11. Spread some apricot jam over the cake and set the top with a marzipan circle. Curl the sides with your fingertips, then place the marzipan rounds on over in a circular pattern.
