INGREDIENTS:

  • One medium green cabbage, sliced into wedges, weighing 2-3 pounds
  • One tablespoon of vegan butter/olive oil
  • Two minced garlic cloves
  • 1 little onion
  • A single tablespoon of gluten-free/all-purpose flour
  • One cup of plant milk (almond, soy, or oat) without sugar
  • 1/4 cup almond/vegan cream
  • One-third cup of nutritional yeast

INGREDIENT NOTES:

Cabbage:

  • Green cabbage can be used. Chop it up thickly to make it retain its shape. Blanch and then bake to get a better texture.

Plant milk:

  • Try to use plain milk that is not sweet. Any of these milks-almond, soy, or oat-will do.

Cream:

  • Apply cashew cream or an alternative one. It thickens and gives a rich texture to the sauce.

Nutritional yeast:

  • Provides a flavor of the cheesy. It makes the sauce gold in color too.

Vegan cheese:

  • Apply a brand that can be melted. The best cheese to use with the dish is cheddar-style cheese.

INSTRUCTIONS:

  1. Set the oven temperature to 375°F (190°C).
  2. Grease a baking dish very lightly.
  3. Make big wedges out of the cabbage.
  4. After 3 to 4 minutes of boiling in salted water, drain & pat dry the cabbage.
  5. In the baking dish, arrange the cabbage.
  6. In a saucepan, heat the oil or vegan butter.
  7. Add the garlic & onion and stir it for the next 3 to 4 minutes till it is soft.
  8. Next, add flour and cook it for more than one minute.
  9. Whisk in vegan cream & plant milk gradually.
  10. Cook till the sauce thickens, 3 to 5 minutes.
  11. Stir in lemon juice, mustard, nutritional yeast, salt, and pepper.
  12. Evenly cover the cabbage with sauce.
  13. Top with vegan cheese.
  14. If desired, add crushed nuts or breadcrumbs.
  15. Bake for 25 to 30 minutes, till bubbling and brown.
  16. After 5 minutes of cooling, serve warm.

TIPS:

  • To reduce time spent on baking, blanch the cabbage.
  • To add a richer flavor, add smoked paprika.
  • Wrap in foil when the cheese does not melt easily.
  • A crunchy coating is added of breadcrumbs or crushed nuts.
  • Pairs with grains or vegetables that are roasted.
