Servings: This recipe makes approximately 1 loaf (12 slices).

Ingredients:

  • 3 cups whole wheat flour
  • 1 cup lukewarm water
  • 2 ¼ teaspoons active dry yeast
  • 1 tablespoon maple syrup or agave nectar
  • 1 tablespoon olive oil
  • 1 teaspoon salt

Instructions:

  1. In a small bowl, combine the lukewarm water and maple syrup or agave nectar. Sprinkle the active dry yeast over the water and let it sit for about 5 minutes until it becomes frothy.
  2. In a large mixing bowl, combine the whole wheat flour and salt. Create a well in the center of the flour mixture.
  3. Pour the frothy yeast mixture and olive oil into the well of the flour mixture.
  4. Gradually incorporate the flour into the wet ingredients, stirring with a wooden spoon or a dough hook attachment of a stand mixer.
  5. Once the dough comes together, transfer it to a lightly floured surface. Knead the dough for about 5-7 minutes until it becomes smooth and elastic. If using a stand mixer, knead the dough on low speed for the same amount of time.
  6. Shape the dough into a ball and place it in a lightly greased bowl. Cover the bowl with a clean kitchen towel or plastic wrap and let the dough rise in a warm, draft-free area for about 1-2 hours, or until it doubles in size.
  7. Once the dough has risen, gently punch it down to release the air. Transfer the dough to a lightly floured surface and shape it into a loaf shape.
  8. Place the shaped dough in a greased loaf pan, cover it with the kitchen towel or plastic wrap, and let it rise for another 30-45 minutes.
  9. Preheat your oven to 375°F (190°C).
  10. Bake the bread in the preheated oven for approximately 30-35 minutes, or until it turns golden brown and sounds hollow when tapped on the bottom.
  11. Remove the bread from the oven and let it cool in the loaf pan for a few minutes. Then transfer the bread to a wire rack to cool completely before slicing.
