INGREDIENTS:

  • 0.25 cup of maple syrup
  • Half a cup of rolled oats
  • A banana
  • 1/4th cup of walnuts/pecans
  • A quarter cup of coconut oil
  • Plant-based chocolate chips, 0.25 cup
  • 1 teaspoon of vanilla essence
  • A cup of oat flour
  • 0.5 teaspoon of cinnamon
  • Baking soda, 0.5 tsp.
  • 1/4th teaspoon of salt

INGREDIENT NOTES:

OAT FLOUR:

  • It will let you experience the flavor of whole grain. You can also use almond flour or all-purpose flour.

MAPLE SYRUP:

  • It is a natural sweetener that will sweeten your cookies along with the sweetness from the banana

WALNUTS/CHOCOLATE CHIPS:

  • These are the optional add-ins that you can add or skip as you choose. If you are not a fan of walnuts and chocolate chips, in that case, you may go for raisins, sunflower seeds, or cranberries(dried).

BANANA:

  • Along with its flavor, it will naturally sweeten your cookies & bind them well. You may swap it with the applesauce, but it will change the flavor.

ROLLED OATS:

  • The rolled oats will help to absorb the moisture & make the cookies firmer. You may go for quick oats, but they are soft, so the cookies might differ in texture.

OIL(COCONUT):

  • It makes the cookies rich & moist. You may replace it with olive oil(light), vegan butter.

INSTRUCTIONS:

  1. Set the oven at 175 degrees C & begin working.
  2. Place the baking mat(silicone)/paper(parchment) on the baking sheet for no mess.
  3. Take a banana in a big bowl & mash it to make a smooth paste.
  4. Include the maple syrup, coconut oil(melted), & vanilla essence to the mashed banana.
  5. Mix all the liquid items till well-incorporated.
  6. Now, include the powdered cinnamon, baking soda, & salt.
  7. After gently combining them, include the oat flour & rolled oats.
  8. Fold them in a single direction till well incorporated.
  9. Your dough for the cookies is ready.
  10. Mix the optional add-ins into the dough.
  11. Now use a single tablespoon /cookie scoop to separate the dough for all cookies.
  12. Dollop each cookie on the baking sheet with a particular gap between each one of them.
  13. Use the spoon back/your fingers to gently press the cookies.
  14. Now, shift the baking sheet with the cookies (ready-to-bake) to the oven(it’s already hot).
  15. As you see, the edges of cookies are light & beautifully golden, take them out of the oven.
  16. Don’t disturb them for ~seven mins.
  17. After that, place the cookies on the rack of wire rack to cool completely.
  18. Your Vegan Banana Bread Cookies are ready to serve upon cooling.

TIPS:

  • If bananas are towards the raw state, they will not give you a good taste. Always use bananas with brown spots on their skin. They will be easier for you to mash & are sweeter.
  • Cookies always firm up upon cooling, so take them out of the oven. Once they look solid from the center & light golden from the edges. Otherwise, they will overbake, resulting in burnt & hard cookies
  • When cookies are ready-to-bake, keep the tray with cookies in to refrigerator for some twenty mins. Then, baking the chilled cookies will give you more puffed-up cookies.
