INGREDIENT NOTES:
SPAGHETTI:
- This pasta works well with the creamy sauce and gives better results. It gives classic pasta texture and fiber to the recipe. You may use fettuccine as another choice.
WHITE ONION:
- It cooks slowly and gets caramelized in the meal. White onion provides a natural sweet taste and rich flavor to the sauce. Utilize sweet onions as a replacement.
CHILI CRISP:
- It is the savory ingredient in this pasta that provides a little texture. Chili crisp has flavorful oil that mixes well with the creamy sauce. You may use crushed red pepper flakes as a substitute.
OLIVE OIL:
- This oil prevents the ingredients from sticking to the pan. Olive oil includes a fruity taste in the pasta and richness to the onions. You may skip it and use a good non-stick skillet.
INSTRUCTIONS:
- First, peel the onion and slice into evenly thin strips.
- Put the skillet on medium-low flame, then add olive oil and 2 tbsp vegan butter.
- Cook the onion for 20 minutes, stirring frequently so it becomes lightly caramelized.
- Boil salted water in the pot and cook spaghetti as per package guidelines.
- Reserve half a cup of pasta water for later use and drain the pasta well.
- Add the remaining vegan butter to the onions when they become soft.
- Now cook the garlic for one minute, then mix chili crisp, soy sauce, and maple syrup in the skillet.
- Cook for one minute, then pour vegan cooking cream over it on low flame.
- Stir in paprika, garlic powder, Italian seasoning, and black pepper, then simmer the ingredients gently for 5 minutes.
- Include vegan parmesan and melt it into the sauce, then add cooked spaghetti.
- Toss the ingredients and mix 1 tbsp reserved pasta at a time for the desired consistency.
- Lastly, add the pasta into four bowls and garnish with parsley and a little chili crisp.
