EQUIPMENT:

  • Food blender
  • Tea kettle or saucepan
  • Small bowl
  • Airtight jar

INGREDIENTS:

  • 1 cup of raw cashews
  • 3/4 cup of water
  • Two chipotle peppers from an adobo can
  • Chopped garlic clove 1
  • Half a lime makes 2 tbsp juice
  • Half a teaspoon of salt

INGREDIENT NOTES:

Cashews:

  • We used unsalted and cashews to create this sauce.

Chipotle peppers:

  • The red jalapeno peppers used in Chipotle are smoked, dried, and then canned with adobe sauce. Don’t omit the chipotle peppers, since they are essential to the smokiness and richness of the sauce.

Lime:

  • Use fresh lime juice for a better zesty flavor.

Instructions:

  1. Pour several glasses of water into a tea kettle or saucepan. Set it on the stovetop to boil.
  2. Next, add raw cashews in a measuring glass cup or small bowl. Cover it with boiling water.
  3. Now, dip them in hot water for nine to fifteen minutes or three/four hours.
  4. After an hour, remove the extra water from the cashews.
  5. Add soaked cashews, salt, lime juice, chipotle peppers from an adobo can, crushed garlic, and three-quarters cup of water to a blender.
  6. Blend all sauce items at a high speed until a creamy texture foams.
  7. Check the sauce flavors and add items (if required).
