Ingredients

  • Tempeh Bacon
  • Olive oil, 2-3tbsp
  • Tempeh 8 ounce
  • Low sodium soy sauce 1/4cup
  • Pure Maple Syrup 2tbsps
  • Liquid Smoke 1tsp
  • Garlic Powder 1/2 tsp

Red Wine Vinaigrette

  • Red Wine Vinegar 1/4 cup
  • Dijon Mustard 1tsp
  • Maple syrup 1tbsp
  • Chopped Garlic 1tsp
  • Sea Salt 3/4tsp
  • Black pepper, 1/2 tsp
  • Olive Oil 1/2 cup

Other Ingredients

  • Chopped lettuce, 6 cups
  • Baby spinach, 12 cups
  • Cooked Chickpeas 3 cups
  • Grape Tomatoes, 1cup
  • Sliced Large Cucumber 1
  • Grated carrots, 1 cup
  • Corn 1/2cup
  • Chopped Red onion, 1/2 cup
  • Dairy-free cheese, 1/2 cup
  • Fresh dill

Ingredient Notes

Tempeh Bacon: You can replace it with different types of bacon like eggplant bacon, tofu, or mushroom bacon.
Maple syrup: It is used to adjust the flavors of salad.
Baby Spinach: We use this item because it provides a flavorful and soothing taste.
Chickpeas: I used canned chickpeas to make this salad. You can cook chickpeas at home and use it.
Grape Tomatoes: It gives a sweet taste. You can replace it with cherry tomatoes.
Cucumber: You can use it as a topping. It adds a refreshing feel.
Corn: I used cooked corn. You can use roasted or grilled corn.

Instructions

Preparation of Tempeh Bacon

  1. Warm olive oil in a large pan at medium heat.
  2. Add tempeh bacon pieces to this pan. Cook it for 5-6 minutes.
  3. Next, add soy sauce, garlic powder, liquid smoke, and maple syrup to the pan.
  4. Simmer it for 4-5 minutes. Turn off the flame and place aside.

Preparation of Vinaigrette

  1. Add vinegar, maple syrup, olive oil, Dijon mustard, black pepper, oregano, salt, and garlic in a bowl.
  2. Combine all ingredients.
  3. You can add all ingredients in a jar and mix it well until combined.

Assembling

  1. Take a large salad plate.
  2. Add the first layer of chopped lettuce, the second layer of baby spinach, cucumber, corn, tomatoes, red onion, vegan cheese, cooked tempeh, and chickpeas.
  3. Pour the vinaigrette mixture over the salad.
  4. The tasty salad is ready.

You can add fresh herbs, cooked quinoa, vegan cheddar cheese, grated radish, sliced cucumbers, green beans, sunflower seeds, or faro as a topping. All these topping suggestions will make it more appealing and flavorful.
