Ingredients

  • Noodles 8 ounces
  • Water 1 cup

Preparation of Sauce

  • Vegan Butter 1tbsp
  • Chopped Garlic Cloves 4
  • Red pepper flakes 1/4tsp
  • Chopped Edible Mushrooms 1 cup
  • Reduced Soy sauce 1tsp
  • Water 1/4 cup
  • Sesame oil 1/2tsp
  • Green Onions 2, chopped
  • Vegan parmesan 3tbsps
  • Plant-based coconut milk 1/2 cup

Ingredients Notes

Water:

  • You can replace the simple water with vegetable broth. The broth will enhance the noodle’s flavor.

Soy sauce:

  • Tamari sauce and coconut aminos are also good alternative options.

Mushrooms:

  • You can add different mushrooms Cremini, Shiitake, Portobello, Oyster, or Maitake. Each mushroom has a distinct aroma and taste. You can add it depending on your flavor and taste,

Garlic:

  • Fresh garlic will work best to make the noodles. But you can use ready-made garlic paste.

Sesame Oil:

  • To enhance the flavors, you can add vegan hoisin. It gives a salty, and sweet taste to the noodles.

Instructions

  1. Take a large pot, add water and a teaspoon of salt. Boil the water over a high flame.
  2. Next, place the uncooked noodles in salted boiled water.
  3. Cook it for 10-15 minutes or until chewable.
  4. Or boil the noodles as directed on the packet.
  5. Once the pasta is done, shift it on a colander to remove its extra water.
  6. Set aside the pasta. Meanwhile, we will prepare the sauce.
  7. Over a medium flame melt vegan butter in a large non-stick pan.
  8. Next, add chopped garlic, and simmer it for 1-2 minutes until brown.
  9. Now, add red pepper flakes, mushrooms, and soy sauce to the pan.
  10. For 2-3 minutes, saute all ingredients.
  11. After that, add sesame oil, green onions, canned coconut milk, and water.
  12. Thoroughly stir all ingredients with a spoon.
  13. After that, add the boiled pasta with mushrooms and onions mixture.
  14. Cook it for 2-3 minutes so the sauce and pasta combine well.
  15. Sprinkle over the salt, and red chili pepper flakes over the noodles.
  16. The tasty and spicy noodles are ready. Transfer the noodles to a plate.
  17. Serve the tasty noodles with shredded parmesan cheese. You can also add grated cheese over the noodles.

Tips

  • Noodles should not be overdone.
  • To thicken the consistency of the soup, you can add a teaspoon of cornstarch.
  • Add jalapenos, red chili peppers flakes, or sriracha for a spicy tasty.
  • You can also squeeze the fresh lemon juice over the noodles. It will give a citrus flavor.
  • Use good-quality vegan soy sauce or tamari sauce.
