INGREDIENTS

  • 2 garlic cloves(MINCED)

  • Nutritional yeast, two tbsps.
  • 1/2 teaspoon of cumin, ground

  • Finely chopped green onions, two
  • 1 teaspoon of turmeric powder
  • Fresh parsley or cilantro, chopped

INGREDIENT NOTES

CORNSTARCH

  • It serves as a binder and helps to crisp up the cakes. You may use arrowroot or tapioca starch in its place.

TOFU

  • This recipe requires the firm or extra-firm tofu, which is pressed and drained to release most of the liquid. Silken tofu makes your dish watery, so avoid using it. If you are allergic to soy, then use mashed chickpeas or white beans in its place

OIL

  • We are using olive oil for frying purposes. To lower the calories, apply broth or water using a brush to enjoy the oil-free baking.

BREADCRUMBS

  • Their addition will make the cakes crispy and properly bind for you. You may use ground oats, gluten-free breadcrumbs, or almond flour to keep the cakes free from gluten.

SOY SAUCE

  • It adds the classic umami taste. Coconut aminos are the gluten-free option.

NUTRITIONAL YEAST

  • It is a vegan option to add the savory and cheesy flavor to our cakes. You may omit it or swap it with vegan parmesan cheese.

INSTRUCTIONS

  1. Drain and press tofu for a minimum of ten minutes to release the extra moisture.
  2. Use a fork to mash the pressed and drained tofu into crumbs in a big mixing bowl.
  3. Add garlic, breadcrumbs, green onions, nutritional yeast, cornstarch, soy sauce, cumin, parsley, paprika, and turmeric to the breadcrumbs.
  4. Mix well to make a properly combined mixture.
  5. Separate a portion that can shape into a two-inch-wide patty.
  6. Similarly, shape all the patties till the mixture finishes.
  7. You will get around twelve small cakes.

PAN-FRYING

  1. Keep a skillet with olive oil on a normal flame
  2. Place patties in the skillet once it becomes hot.
  3. After some three or four minutes, flip the patty.
  4. Simultaneously fry the opposite side.
  5. Dish them out on a serving platter once both sides become crispy.

BAKING

  1. Heat the empty oven to 190 °C.
  2. Arrange all the patties on a parchment-lined tray.
  3. Bake them till both sides are crispy with a flip after half time has passed.

FRIDGE

  • Save the cooked and cooled tofu cakes in an airtight container. Keep them chilled in the fridge for around four days.

FREEZER

  • Arrange the shaped, uncooked tofu cakes on a parchment-lined tray. Keep them in the freezer. Once the cakes become solid, transfer them to the freezer-safe box or bag. They will be best frozen for two months. Give them some extra minutes to cook them directly from the frozen state.

REHEATING

  • Use the air fryer or skillet to reheat them to bring their crispness back.
