Ingredients
For Homemade Cashew Milk
- Raw Cashews 1 Cup
- Water 1cup
For the Ice Cream
- Full-fat coconut milk 1cup
- Homemade Cashew Milk 2 cups
- White Granulated Sugar 1 cup
- Water 1/4Cup
- Cacao Butter 3/4Cup
- Coconut Oil 1/4Cup
- Salt 1/4tsp
- Pure Vanilla Extract 2tsp
Instructions
- Making of Cashew Milk
Take boiled water in a bowl and add raw cashews to this bowl.
Soak it for an hour. After that, add soaked cashews with water into a blender.
Blend it for 3-5 minutes until it gives a creamy texture.
Add coconut milk with cashew milk in a large bowl.
Mix well. Put aside this bowl.
- Making of Ice Cream
Add granulated sugar with half a cup of water in a saucepan.
Simmer it to a medium flame until sugar is dissolved completely.
Next, add coconut oil, salt, and cacao butter to this saucepan.
Cook it for 4-5 minutes until all ingredients melt.
Add the pure vanilla extract and dissolved sugar to the coconut milk.
Mix all ingredients by using an immersion blender.
Put this bowl in the freezer. For 15-20 minutes.
After 20 minutes, shift this chilled mixture into an ice cream machine.
Beat it well for 30-40 minutes until it forms velvety and creamy.
Transfer this mixture to ice cream popsicles.
Freeze it for 10-12 hours before serving.
