APRICOTS
- Use fresh and ripe apricots after cutting them in half and removing their seed. They will give you a sweet and tart flavor after caramelizing beautifully. You may replace the apricots with nectarines or peaches.
PISTACHIOS
- Adding chopped pistachios will add crunch and a nutty finish. This work can also be done by walnuts or almonds.
OIL
- We use coconut oil or vegan butter to have the golden surface.
POMEGRANATE ARILS
- They provide freshness, color, and lots of sweet-tangy juice that properly balances the caramelized apricots in the proper way.
SWEETENER

INSTRUCTIONS
- Mix the vegan labneh with the vegan honey and lemon zest.
- Whisk the mixture to make it creamy and silky.
- Refrigerate it till you prep the apricots.
- Place a skillet(non-stick) over a moderate flame with coconut oil and sugar.
- Stir continuously til the sugar dissolves and starts to caramelize.
- Then place each apricot slice so that the sliced side is facing towards the caramel.
- Cook the apricot halves till they caramelize, for about 04-05 minutes.
- After that, carefully turn each one over.
- Cook from the opposite side for two minutes.
- Now, turn the flame off and put the skillet down on the countertop.
- Place a little dollop of vegan labneh and spread it a little on your serving platter.
- Then arrange 1-2 caramelized apricot nibbles over it.
- Spoon a little more labneh over the apricot.
- Now, sprinkle pistachios, pomegranate arils, and a drizzle of vegan honey or agave syrup.
- Use a few mint leaves for garnishing.
