Vegan Marshmallows

Vegan Marshmallows

Ingredients

  • Powdered Sugar 1/2cup
  • Cornstarch 1/2cup
  • Aquafaba 1/2cup
  • Cream of Tartar 1/4tsp
  • Vanilla Extract 2tsps

For Syrup

  • Granulated Sugar 1cup
  • Water 1/3cup

For Agar Batter

  • Agar Powder 4tsps
  • Granulated Sugar 1/4cup
  • Water 3/4cup

Instructions

  1. Place parchment paper inside the pan and add a thin layer of cornstarch and powdered sugar.
  2. Next, add cream of tartar, and aquafaba in a blender.
  3. Blend it well at medium speed until a creamy texture forms.
  4. Put this mixture aside.
  5. Take a pan. Add granulated sugar, and water to this pan.
  6. Put this pan on the burner and turn on the flame.
  7. Over medium-high flame cook it for 10- 15 minutes until a syrup texture forms.
  8. When the sugar syrup is done, slowly pour over the aquafaba.
  9. During pouring, add vanilla extract.
  10. Mix it well until aquafaba coats well with sugar syrup. Set aside this pan.
  11. Take another pan. Add water, granulated sugar, and agar powder to this pan.
  12. Combine all ingredients well.
  13. Boil all these ingredients over a medium heat.
  14. Continuously whisk it for 4-5 minutes so that it won’t stick to the pan.
  15. Add this agar mixture to the aquafaba.
  16. Toss it well until the agar mixture combines well with aquafaba.
  17. With the help of a clean spoon, shift the coated aquafaba to the greased pan.
  18. Cover this pan with a plastic wrapper, or kitchen towel. Set aside it for 4-5 hours.
  19. After that, lightly coat it with cornstarch and powdered sugar.
  20. Mix it. Cut the Marshmallows into square, or diced shapes.
  21. The fluffy vegan Marshmallows are ready.
  22. Top it with different colorful sprinkles, or chocolate syrup.

Substitutions

Cornstarch: Potato starch, arrowroot powder, or tapioca can be used in the place of cornstarch.
Sugar: You may use honey, maple syrup, date syrup, and agave in place of granulated sugar. Depending on your choice, you can add the quantity of sugar.
Vanilla Essence: You can add different flavors to make these tasty marshmallows. Different types of flavors like mint, strawberry, orange, banana, raspberry, pumpkin, chocolate, or scotch butter.
