INGREDIENTS:

  • 2 cups mixed berries
  • 1 can full-fat coconut milk
  • 1/3 cup maple syrup
  • 1 teaspoon food-grade violet syrup
  • 1 tablespoon lemon juice
  • ½ teaspoon vanilla extract
  • Sea salt pinch

INGREDIENT NOTES:

MIXED BERRIES:

  • We can use both fresh and frozen berries to prepare this ice cream. Frozen berries provide a thick texture, so they are better than fresh. Choose the ripe berries to provide the best flavor. It includes Strawberries, Blueberries, Raspberries, Blackberries, and Red currants in the berries mix.

COCONUT MILK:

  • We have to use whole cream coconut milk to make the creamy ice cream. Avoid using the light coconut milk as it makes the ice crystals in the ice cream. We have to shake the can before use.

MAPLE SYRUP:

  • It is used to add a sweet taste without adding an intense flavor. Add the quantity according to your sweet taste. It will blend smoothly in the ice cream base. Avoid using the pancake’s maple syrup and stick to pure one for the best taste.

VIOLET SYRUP:

  • We have to use the food-grade violet syrup to add the purple color & floral hints in this ice cream. Small amount of syrup is sufficient to add a subtle taste. Don’t add much, as it will taste soapy.

LEMON JUICE:

  • Lemon juice is used to brighten the taste of mixed berries. It will also help to balance the sweet taste. Use the fresh lemon juice for strong flavor.

VANILLA ESSENCE:

  • It is added to enrich the taste of this ice cream. It also adds a warm aroma to it. Use the pure vanilla essence for a strong taste and aroma.

INSTRUCTIONS:

  1. Add the mixed berries, maple syrup, lemon juice, vanilla essence, salt, coconut milk, and violet syrup to the blender.

  3. We taste the mixture and add more sweetener if required.
  4. Add the mixture to the container and freeze for 2 hours.
