Ingredients

  • Extra Firm Tofu 14ounces
  • Olive Oil 1/3cup
  • Fresh Lemon Juice 1/4cup
  • Lemon zest 2tsps
  • Chopped garlic clove 1
  • Salt 1tsp
  • Large zucchini 1
  • Portobello Mushrooms 1cup
  • Vegan Mayo 1/3cup
  • Fresh Basil 1/4cup
  • Whole Grain Bread 8 slices
  • Baby Spinach 2cups
  • Sliced Tomato 1
  • Pickle slices 4

Instructions

  • Marinate The Tofu
  1. Take extra firm tofu. Cut into bite sizes.
  2. Add fresh lemon juice, olive oil, chopped garlic, and salt into a mixing bowl.
  3. Add sliced tofu to this bowl. Combine all ingredients.
  4. Set aside this marinated tofu for 15-20 minutes.
  5. Meanwhile, heat the oven to 425 degrees to bake the marinated tofu.
  6. With parchment paper wrap the baking sheet to avoid the burning.
  7. Next, add marinated tofu to this baking sheet in a likewise direction.
  8. For 20 to 25 minutes, bake it until the tofu color changes.
  • Cut Vegetables
  1. Discard the Portobello mushroom stems, and cut it into fine slices.
  2. Next, cut the zucchini into fine slices. Set aside the chopped vegetables.
  3. Coat the grill pan with olive oil. Warm this pan on a slow flame.
  4. Add sliced vegetables to this pan. Sprinkle over with salt and black pepper.
  5. For 3-4 minutes, grill each side until color changes.
  6. After that, set aside the pan from the flame.
  7. Keep aside the grilled vegetables.
  • Making of Spread
  1. Add vegan mayo, lemon zest, and chopped basil to a mixing bowl.
  2. Stir all ingredients until a creamy texture is formed.
  • Assemble the Sandwich Ingredients
  1. Take bread pieces. Spread vegan mayo on each piece of bread.
  2. Top the first slice of bread with marinated tofu, mushrooms, and zucchini.
  3. Add the second layer of sliced tomatoes, pickles, and spinach.
  4. Cover it with a second slice, and gently press the sandwich.

  6. Grill all sandwiches for 1 minute.
