- Extra Firm Tofu 14ounces
- Olive Oil 1/3cup

Instructions
- Marinate The Tofu
- Take extra firm tofu. Cut into bite sizes.
- Add fresh lemon juice, olive oil, chopped garlic, and salt into a mixing bowl.
- Add sliced tofu to this bowl. Combine all ingredients.
- Set aside this marinated tofu for 15-20 minutes.
- Meanwhile, heat the oven to 425 degrees to bake the marinated tofu.
- With parchment paper wrap the baking sheet to avoid the burning.
- Next, add marinated tofu to this baking sheet in a likewise direction.
- For 20 to 25 minutes, bake it until the tofu color changes.
- Cut Vegetables
- Discard the Portobello mushroom stems, and cut it into fine slices.
- Next, cut the zucchini into fine slices. Set aside the chopped vegetables.
- Coat the grill pan with olive oil. Warm this pan on a slow flame.
- Add sliced vegetables to this pan. Sprinkle over with salt and black pepper.
- For 3-4 minutes, grill each side until color changes.
