INGREDIENTS:
- One cup of flour for all purposes
- Two teaspoons of the cornflour
- 1 spoonful of the sugar
- One-half teaspoon of powdered baking
- 1/2 a teaspoon of salt
- 1/2 tsp cinnamon
- Half a cup of plant milk (oat or almond)
- One teaspoon of vanilla essence
- One spoonful of maple sap
- One cup of freshly sliced & peeled peaches

INGREDIENT NOTES:
Flour:
- This is made using plain all-purpose flour. It provides structure and soft texture. Whole grain flour may be substituted, but the fritters will taste more compact.
Cornstarch:
- Brings out a crisp on the other side. It both thickens & adds a good crunch to the batter. The powdered substitute is arrowroot.
Sugar:
- Adds sweetness. Instead, you can utilize coconut sugar/honey (maple syrup). Do not add a lot of liquid sweeteners/ the batter might thin.
Baking Powder:
- Meanwhile makes the fritters puff & remain flaky. It has to be fresh to work well. Aged baking powder might not provide the potency that you require.
Peaches:
- Take ripe, yet firm peaches. They are also supposed to be sweet & less juicy. Overjuicing will turn the batter into mush.
Plant Milk:
- Oat, almond, or soy milk is good. Controlling sweetness means using unsweetened milk. Add in a little at a time till you have the desired consistency of batter.

- Add the crushed peaches and fold.
- Take a rest for five minutes
- A pan should be heated to a moderate temperature. Pour in some oil.
- For each fritter, pour two to three spoonfuls of batter into the pan.
- Taking the back of a spoon, carefully compress.
- Cook till golden, about three to four minutes per side.
- Repeat with the remaining batter if more oil is needed.
- Transfer the fried fritters to a paper towel to drain excess oil.
- If desired, apply with powdered sugar. Warm up before you serve.
TIPS:
- Don’t mix the batter too much. Stir gently till incorporated.
- To keep from sticking, use a non-stick skillet.
- Distribute the syrup or consume vegan yogurt on a separate plate.
- Cook pancakes a bit longer on low heat for more crunch.

- Put the fried fritters in the freezer between aluminum foil sheets. For the next month, keep it in a sealed box. From frozen, reheat till heated.
FAQs:
May I fry them/can I bake them?
- Yes. Bake on a lined tray at 375°F (190°C). Flip halfway. Bake to a golden brown and bake through about 15 to 20 minutes.
Can I use peaches from the can?
- Yes. Time them and drain them, and pat them dry and chop them. An excessive amount of liquid will cause the batter to be soft and thin.
Is it feasible to use flour without gluten in its place?
