Full Recipe:

Ingredients:

  • 1 large head of green cabbage
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried thyme
  • Salt and pepper, to taste
  • Lemon wedges, for serving (optional)
  • Fresh herbs (such as parsley or chives), for garnish (optional)

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Prepare the Cabbage:
    • Remove any loose outer leaves from the cabbage. Trim the stem end of the cabbage to create a flat surface. Stand the cabbage upright and cut it into 1-inch thick slices, creating “steaks.”
  3. Make the Seasoning Mixture:
    • In a small bowl, whisk together the olive oil, minced garlic, smoked paprika, dried thyme, salt, and pepper.
  4. Coat the Cabbage Steaks:
    • Place the cabbage steaks on the prepared baking sheet. Brush both sides of each steak with the seasoning mixture, ensuring they are well coated.
  5. Roast the Cabbage:
    • Roast the cabbage steaks in the preheated oven for 20-25 minutes, or until tender and golden brown around the edges. Flip the steaks halfway through the cooking time to ensure even roasting.
  6. Garnish and Serve:
    • Remove the roasted cabbage steaks from the oven and transfer them to a serving platter. Garnish with fresh herbs, if desired, and serve hot with lemon wedges on the side for squeezing over the steaks.
