Vegan Roasted Sweet Potatoes

Vegan Roasted Sweet Potatoes are the best delicious and quickest recipe to enjoy on the weekends. It is full of nutrition and flavors. This recipe is made with the cubes of sweet potatoes and then the different types of spices over it. Vegan roasted sweet potatoes are made with all of the plant-based ingredients and then can be eaten by vegans and vegetarians. Thus, it is the perfect recipe for the side dish as well as main course.

Vegan Roasted Sweet Potatoes

Ingredients:

  • Sweet potatoes 907g
  • Vegetable stock 1 cup
  • Black pepper 1/2 tsp.
  • Salt 1/2 tsp.
  • Cinnamon 1 tsp.
  • Dried thyme 2 tsp.
  • Vegan butter 1/4 cup
For candied pecans:
  • Sea salt 1/4 tsp.
  • Cinnamon 1/4 tsp.
  • Smoked paprika 3/4 tsp.
  • Maple syrup 2 tbsp.
  • Dark brown sugar 2 tbsp.
  • Raw pecan nuts 100g

Instructions:

  1. Heat your oven to 450 degrees.
  2. Take the potatoes and then cut them into equal cubes.
  3. Now crumb the butter with your hand all over the potatoes.
  4. Sprinkle the required amount of thyme, cinnamon, salt and then the pepper.
  5. Place the baking tray in the microwave for 15 minutes and then flip the layer of the potatoes and
  6. then bake again for 15 minutes.
  7. Then remove it from the oven and the pour the vegetable broth.
  8. Return them to the microwave and then bake it until the liquid disappears (around 20 minutes).
  9. During this, roast the pecan nuts in a small non stick pan.
  10. Then add the sugar, maple syrup, cinnamon, salt and paprika and then stir them properly.
  11. Roast the nuts until it becomes sticky.
  12. Layer the nuts on the baking paper and then let them cool.
  13. Atlast, sprinkle the niute over the potatoes and then serve it.
Notes:
  • Also, you can store this roasted potatoes in an airtight container for almost 4 to 5 days.
  • Stir the nuts continuously to avoid burning.
