INGREDIENT NOTES:

Tapioca flour:

  • It adds a creamy, sticky texture and hardens the dip.

  • Fresh garlic cloves also work well to prepare this dip.

Rotal tomatoes and green chiles:

  • Any brand of canned green chiles and tomatoes will work.

INSTRUCTIONS:

  1. Raise the oven’s temperature to 375 degrees to warm it.
  2. With a knife, slice the butternut squash into two pieces in the middle.
  3. Now, discard the hard seeds with the help of a spoon.
  4. Shift the sliced squash to a baking dish.
  5. Bake for approximately sixty minutes or until very tender.
  6. After baking, add one and a half soft baked squash to a food blender.
  7. Now, mix almond milk, onion powder, rice vinegar, salt, garlic powder, tomato paste, soaked cashews, nutritional yeast, and tapioca flour into the blender.
  8. Process it until all items gain a creamy and velvety texture.
  9. Next, add the Rotel tomatoes, green chiles, and blended mixture to a saucepan.
  10. Stir continuously over moderate heat for five to six minutes or until enriched.
  11. The creamy and velvety Rotel dip is ready.
  12. Top with pickled jalapenos and pico de gallo.
  13. Then, serve with roasted vegetables and tortilla chips.
