Ingredients
- Penne Pasta 8oz
- Raw cashews, 1 1/2 cup
- Unsweetened almond milk, 1 1/2 cups
- Lemon Juice 2tbsp
- Salt 1/2 teaspoon, or according to taste
- Baby spinach, 4cups
- Artichokes, 14 ounce
- Vegan Butter 2tbsp
- Onion 1, chopped
- Garlic cloves, 4 chopped
Cream sauce
- Tofu 16oz
- Vegan cream cheese, 8 oz
- Vegan parmesan cheese, 1/2 cup
- Tapioca starch 1/4 cup
- Nutritional yeast 1/4 cup
- Dairy milk, 1/4 cup
Ingredient Notes
Pasta: Add your favorite pasta to make this dish. I used penne pasta, but medium shells or fusilli also work well.
Spinach: I used fresh spinach. You can substitute it with frozen spinach.
Artichokes: Their variety comes in canned shapes. Instead of greasy artichokes, I used water-packed artichokes.
Nutritional Yeast: It is used to provide a cheesy and umami flavor.
Tofu: We used dairy-free and firm tofu.
Garlic cloves: I used fresh, chopped cloves. Switch it with ready-made garlic paste for convenience.
Instructions
First, we will prepare cream sauce.
Prepare Cream Sauce
- Take boiled water and add cashews to this water. Soak it for 5 minutes or until it softens.
- Next, add the tofu, vegan parmesan cheese, vegan cream cheese, Tapioca starch, Nutritional yeast, soaked cashews, lemon juice, and dairy milk to a blender.
- Blend all the ingredients until it gives a smooth and creamy texture.
- The creamy sauce is ready. Keep it reserved in the fridge.
- Meanwhile, we will cook the pasta.
Cook Pasta
- Take a large pan and add water. Boil the water at a high flame.
- Next, add the pasta, and boil it according to the instructions on the packet or until it is chewable.
- After boiling, drain its excess water and save only one cup of water.
- Set aside the pasta.
Sauté vegetables
- Take a pan and add the vegan butter. Let it melt at medium flame.
- Now, add the onion and salt. Sautee it for 3-4 minutes.
- Next, add the chopped garlic and artichokes. Cook it for another 5-6 minutes.
- Meanwhile, blend spinach in a blender. Set aside the spinach.
Assembling
- Add creamy sauce and spinach to the same pot. Stir all ingredients and simmer it over medium flame.
- Next, add boiled pasta along with pasta water to the pot. Cook it for 1-2 minutes.
- Sprinkle over the seasonings according to taste.
- Shift the creamy Vegan Spinach Artichoke Pasta into a serving dish.
- Top this pasta with fresh chopped parsley, and serve it.
